Low fat mutton biriyani Recipe

This recipe is enough for 4 -5 people.

Ingredients:
Basmati rice: 3 cups
Butter/oil: 2 tsps
Bone less goat:300 g

Salt: To taste(approx 2 tsps)
Lemon: 1/2
Red chili powder: 1 tsp
Yogurt:2 tbsp

Ginger:1/4 inch
Garlic: 3 cloves
Biryani spices:
3-4 cloves
1 Bay leaf
3 cardamom
3 cinnamon sticks
2 Star anise
Mutton biryani spice powder(Buy from store)-1 tsp
Onion: 1/2 medium
Green chilies:2
Mint: 2-3 stems
Coriander:1/4 bunch


Marination:
Marinate mutton with salt,red chili powder,lemon juice, ginger garlic paste and yogurt for 2 hours.
Use only 1 tsp the ginger garlic paste prepared.



Preparation:
1.Melt butter in thick bottomed vessel. Saute Onions and green chilies.
2.Add 1 tsp ginger garlic paste, 1 tsp biryani spice powder and all of the whole spices.
3. Cook on low heat for 2 min and add marinated mutton.
4.Cook for 10 min on medium flame and add rice and water( i used 4 cups of water to 3 cups of rice)

5. Add salt to water and do not mix rice and mutton.You can add mint leaves at this stage.
6.Cook on high heat for 5-10 min until rice comes to boil and water is evaporated.

7. At this point put the flame to minimum and put the lid on.
8. Cook for 15-20 min and your biryani is done.
9. Garnish with coriander and serve with lemon slices and onion.

This recipe is low fat because i used only 2 tsps of butter.Boneless mutton has no fat in it.
